Beth’s Easy Blueberry Waffles | ENTERTAINING WITH BETH

Makes 12 waffles

1 ½ cup (180g) flour
1 tbsp (15 ml) baking powder
½ tsp (2.5ml) baking soda
½ tsp (2.5ml) salt
1 tbsp (15 ml) sugar
2 eggs
1 cup (240 ml) of milk
1 tsp (5 ml) vanilla
7 tbsp (105 ml) melted butter
¾ cup (180 ml) club soda
1 cup (150 g) of fresh blueberries
1 tsp (5 ml) fresh lemon zest
powdered sugar for garnish
pure maple syrup, warmed

Whisk together the flour, baking powder, soda, salt and sugar.

Add the eggs, milk and vanilla, melted butter and club soda.

Toss the lemon zest with the blueberries and fold into the batter.

Heat waffle iron to medium-high heat, pour ¼ cup of batter into each well allow to set for 15 secs then lower top to close and cook.

Dust with powdered sugar, top with butter and drizzle with warmed maple syrup.

    Oh my god, this looks delicious! But mine looked better lol. I made some of these with my grandkids. But we couldn't eat them all. So I gave some to my husband! Who really enjoyed them.

    I have been searching for an easy recipe that would make light and crisp, perfectly cooked waffles, after trying several recipes that made heavy, not very good ones. My 12 year-old nephew just declared them to be delicious and is having his second helping. They reheat nicely in the toaster. I think you are right that the secret is the sparkling water. Thank you so much!

    I replaced the vanilla with a little bit of caramel sauce, because my mother dislikes vanilla. Of course I topped it with the caramel, too. It was WONDERFUL!

    Just made these and they are delicious and airy and fluffy just like you said! They are even good plain! However the blueberries made my waffles soggy:( I don't have the same waffle iron as you, mine are thin squares for the waffles so it squished my blueberries and made a mess in my iron haha! But they are sooo good plain too, both work!:) love your videos so much and have made so many of your recipes!
