Creamy Comforting Tomato Coconut Soup Recipe – Healthy Snack & Dinner Recipes

A new twist to the usually boring tomato soup is here. It is this tasty wonderful protein filled soup with the blend of Coconut and Tomatoes. Enjoy this mouth watering soup and if you have any comments feel free to mention in it the comment box below.


1 Tbsp olive oil
1 medium yellow onion (chopped)
2 medium cloves of garlic (chopped)
1 tsp paprika
1 Tbsp balsamic vinegar
1 (14 oz) can of diced tomatoes, with their juice
1 can of chickpeas (rinsed and drained)
1 can light coconut milk
1 1/2 cups water
4-5 fresh thyme sprigs + extra for garnish
1 tsp dried oregano
salt and pepper to taste
1/4 cup nutritional yeast (or Parmesan cheese)


– Heat olive oil in a deep pot. Add the onion and garlic and cook until the onion is translucent.
– Add the paprika and cook for 30 seconds or so (until fragrant). Add the balsamic vinegar and stir.
– Next, add the tomatoes, thyme leaves, oregano, chickpeas, coconut milk, and water. Stir until well combined.
– Cover and gently simmer for about 20 minutes.
– Let it cool for a few minutes then transfer to a blender and puree until smooth. Add the nutritional yeast (or cheese) and additional water to thin the soup (only if necessary) and blend again until just combined.
– Garnish with extra thyme leaves and a drizzle of olive oil.
– Enjoy!
