BETH’S EASY SUMMER DINNER!
Serves 2-3

INGREDIENTS:
1 melon (Golden Kiss, Tuscan, etc)
1/4 lb of Imported Prosciutto

4-5 Tomatoes (various colors)
2 balls of fresh Burrata Cheese, or fresh Mozzarella packed in water)
Generous drizzle of Virgin Olive Oil
Fleur de Sea Salt (Like Maldon flakes)
Fresh Cracked Pepper
1 Bunch of fresh basil

METHOD:
Cut melon into melon boats. Place on a platter. Top with 1-2 slices prosciutto. Set aside

On a separate platter. Place cheese in the center. Slice and arrange tomatoes around cheese. Drizzle cheese and tomatoes with olive oil. Sprinkle salt and pepper to taste. Top with roughly chopped basil.

Dinner is ready!
