CHICKEN – CANNING “DINNER IN A JAR” STEP BY STEP [HOW TO DO IT] (OAG 2017)



***THIS IS EASY*** FOLLOW MY STEPS TO SUCCESS!
In this video I show you how to can chicken and then make a meal with it.
RECIPE
Makes 4 or 5 pints depending on how full you fill the jars.

2 pounds of chicken (Use all thighs or a 50/50 mix of
thighs and breast) Deboned and skinless.
1 cup of potatoes (peeled and diced)
1 cup of onion (chopped)
1 cup of celery (diced, about 2 stalks)
1 Teaspoons of salt
1 Teaspoons of poultry seasoning
1 Teaspoons of Black Pepper
Mix all together in a large bowel
PUT 1/4 TSP salt in the jars.
Fill jars with chicken and vegetables mixture.
Fill jars to one inch head space with chicken broth
De-bubble the jar to get the air bubbles out.
Wipe the rim of the jar with a paper towel soaked with vinegar
Place a lid and ring on the jar, tighten the ring and place in the pressure canner
Vent the canner for 10 minutes
Process at 10 pounds pressure for 1 hour and 15 minutes (75 minutes) OR AS NEEDED FOR YOUR ALTITUDE

When you open a jar to use, place the chicken/vegetables in a sauce pan, bring to a boil and add 1 tablespoon (or as needed) flour (all purpose) to thicken the liquid (make the gravy).

    That looks deeelish!! I love canning chicken. You're so right about browning it first too. I found (like so many others) if you raw pack chicken it gets too flaky and resembles canned tuna in taste and texture. I happen to like tuna myself but NOT tuna flavored chicken! LOL 😂 Browning it just like you makes it so much better! I LOVE this recipe of yours too. It's such a great starter for so many dishes. You could use it as you did, you could make chicken and dumplings, chicken soup, chicken pot pie, on and on and on! Your method is just perfect and so versatile.   16. What a great idea and a great vid!! Good advice on the safety rules with the pressure cooker!! In the UK we eat potato salad with a cold salad so not sure if I could eat it with hot food but that is just me, a funny sod lol!!
