Back to School Lunch Ideas (VEGAN + GF OPTIONAL)

**Chickpea ‘tuna’ salad**
2 cans of chickpeas, drained and rinsed
1/4 cup onion, diced
1/3 cup celery, diced
1 tsp dijon mustard
2 TBS vegan mayo
1 TBS tahini
1 tsp garlic powder
Fresh parsley and dill
Salt and pepper to taste
1-2 TBS fresh lemon juice

**Veggie Sushi**
Dried nori
2 TBS water
Sesame seeds
Filling options: avocado, sweet potato, tofu, eggplant, marinated mushrooms

Spicy mayo for sushi:
Vegan mayo + Sriracha = spicy mayo

Edamame salad:
Edamame pods
Soy sauce
Lemon juice
Red bell pepper, diced
Sesame seeds

**Tofu Rice Noodle Salad**

Tofu marinade:
Braggs liquid amino
Rice vinegar
Maple syrup
Chili garlic paste
Garlic powder

Peanut sauce:
1/4 cup peanut butter (cold not room temp)
1/4 cup hot water
2 tsp maple syrup
1 clove of garlic, minced
1 tsp fresh ginger, minced or grated
1 1/2 tsp soy sauce or Bragg’s liquid aminos
dash of Sriracha
1 tsp rice vinegar

Other fixins:
Rice noodles
Salad greens
Bell peppers
Shredded carrots
Purple cabbage

  10. Ok that peanut sauce tho ? I made mine by simmering on the stove a can of full fat coconut milk, a half cup of peanut butter, soy sauce, garlic, and some other odds and ends. Love that these recipes are pretty low salt also!!! xoxo Nicole
