Veganizng my Favorite YouTuber’s DINNER | Allana Davison recreation

Turning a dinner recipe that I saw on Allana Davison’s what I ate today video into a low-fat, vegan version that’s fast, easy, and super delicious! Full recipe + links below 🙂

Oil-Free Vegan Quinoa with Sun-dried Tomatoes
2 cups water
1/2 tsp apple cider vinegar
2 pinches of sea salt

Bring to a boil and add 1 cup dry quinoa. Stir and reduce heat to low. Cover and simmer for 15 minutes or until all of the water is absorbed.

Full with a fork, add 1/4 cup chopped sun dried tomatoes and serve warm or cold.

Grilled Tofu

Super firm tofu (I usually eat about 1/3 of a block but make as much as you like)

Sprinkle on sea salt, pepper, garlic powder, and dried Italian herbs. Press seasoning into the tofu and grill on a warm grill pan (lightly sprayed if you like.) Medium high is perfect for this. If it’s too hot it will stick.

The trick to nice grill marks is not to touch or flip right away. Let the tofu sit on the grill for a few minutes to create a golden brown crust, about 2 minutes, and then flip and cook on the other side.

Serve warm tofu over quinoa along with broccoli and roasted tomatoes.

Vegan Lemon Dill Sauce
1-3 tbsp vegan mayo
lemon juice
salt + pepper
fresh dill

This is all to taste. If you want it to be thicker, add more mayo. If you want a little dill, or a lot of dill, add accordingly. My ratio was about 1.5 tbsp mayo, 1/2 small lemon, salt, pepper, and 1 tsp chopped fresh dill.

    Holy moly that looks amazing , I still haven't ventured into trying tofu but this looks so good & fresh that I might just have too ! Dill & roasted tomatoes on anything will always win me over ! Also love the recreation idea, awesome way to get new inspiration xx
