HEALTHY BREAKFAST + LUNCH IDEAS



these are recipes that actually taste good and i even finished all of them after filming this video

loaded sweet potato ingredients:
– 2 large sweet potatoes
– 1 can of chickpeas (1.5 cups)
– 1 tsp paprika
– 1 tsp garlic salt or garlic powder
– 2 spoonfuls salsa/pico de gallo ( you can make homemade or store bought)
– 1 tbsp lemon juice
– 1/2 cup REGULAR greek yogurt
*ALL THE COCONUT FLAVOUR WAS IN A LAYER AT THE BOTTOM THAT I WAS SUPPOSED TO MIX IN BUT HOW WAS I SUPPOSED TO KNOW? I COULD NOT SEE THROUGH THE YOGURT*
– 1 tsp salt

cooking times
– cook sweet potatoes at 425 F for 40 mins or until tender
– mix chickpeas with paprika and garlic salt/powder and bake at 425 F for 20 mins
– mix yogurt, lemon, and salt for “sour cream”
– assemble everything

baked oatmeal ingredients:
– 2 medium ripe bananas
– 1.5 cups blueberries (*you use half at a time, half at start and half at the end)
– 1/4 cup honey/ agave
– 1 cup quick oats
– 1/4 cup pecans/walnuts (*you use half at the start and half at the end)
– 1/2 tsp baking powder
– 1 tsp cinnamon
– pinch of salt
– 1 cup of any milk (almond, soy, 2%…)
– 1 egg
– 1 tsp vanilla extract

cooking instructions:
– cut your bananas into your desired thickness of banana slice and place in a greased 8×8 baking dish then sprinkle half the blueberries and the 1 tsp of cinnamon and 1 tbsp honey in the dish and then cover with aluminum and bake at 375 F for 15 mins or until tender
– mix all the dry ingredients together in another bowl – oats, HALF your pecans/walnuts, baking powder, cinnamon and salt
– mix wet ingredients in another bowl – milk, egg, vanilla extract and honey
– take out your baked banana layer and add the dry ingredients, wet ingredients, and the other half of your blueberries and nuts
– bake at 375 F for another 30 mins
