Filming with Channel 4 Dubai – showing presenters Nimi & Jacob how to make Saffron and Cardamom Muesli (an adapted recipe from my cookbook Saffron Soul)
First toast the saffron on an already heated pan for a couple of minutes so it’s ready to use and eat (my grandmother’s tip!)
Now soak the muesli (for as long as you can, from half hour to overnight)
For one bowl:
– 5 tablespoons oats
– Almond milk or any milk of choice just an inch above the level of the oats (around 1 cup or less)
– Squeeze half an orange (don’t use orange if using cow’s milk)
– 1 tablespoon flax seeds, whole or ground
– 1-2 teaspoons chia seeds
– pinch of saffron
– 1/4 teaspoon cardamom powder
– grated apple or apple chopped in thin slices

Garnish with a sprinkle of the following, using whichever you like and have (and can also stir some into the mixture)
– walnuts, broken
– almond flakes
– raspberries
– goji berries
– sultanas
– pumpkin seeds
