CHIA SEED PUDDING:
serves 1 ( i made 5 )
-1/4 cup chia seeds (http://go.thrv.me/SH70W)
-1 tbsp unsweetened shredded coconut (http://go.thrv.me/SH70Y)
-1 tbsp cacao nibs (http://go.thrv.me/SH70a)
-1 scoop greens powder (http://go.thrv.me/SH70U)
-1 cup coconut/almond/nut/rice/soy/oat/plant milk
-1 squeeze sweet drops (or any sweetener you like)

combine all ingredients in a jar except the coconut milk and sweetener. mix evenly. pour in your milk and sweetener and stir until combined. cover and let set in refrigerator for at least an hour so the seeds can soak up all the moisture! add more liquid when serving as desired.

*serve with avocado

TOFU NOODLE STIR FRY
serves 2-1 block extra firm tofu, pressed (340g)
-1/2 onion, diced
-1 to 2 cups mushrooms, sliced
-1 tbsp olive/coconut oil (you can use water to saute as well) (http://go.thrv.me/SH70g)
-1 package wonder noodles, spaghetti (http://go.thrv.me/SH70e)
-1 avocado
-1 to 2 tbsp Yai’s thai almond sauce (http://go.thrv.me/SH70c)

saute onions on a pan, then add mushrooms and cook down. add the tofu and the sauce once the mushrooms have reduced in size. drain and rinse the noodles (it’ll smell like fish! be prepared!) and add them into the stir fry until warmed. serve over greens, grains, and add avocado, as usual 🙂

CHEESY KALE TOFU STIR FRY
-2 cups chopped kale
-1 cup sliced mushrooms
-1 block extra firm tofu, pressed (340g)
-2 tbsp sunflower seeds (http://go.thrv.me/SH70i)
-1 to 2 tbsp teriyaki sauce (http://go.thrv.me/SH70k)
-2 to 3 tbsp nutritional yeast (http://go.thrv.me/SH70m)
-hot sauce of choice

saute kale and mushrooms together until cooked down and soft, then add in tofu and mix together. add sunflower seeds, teriyaki sauce, and nutritional yeast one at a time, mixing in between to ensure even distribution. serve over more greens and grains!

    what's your secret for your avo not browning if its prepped??? I always add it last minute and sometimes put some lime/lemon eo with the pit inside to keep half for later. Even though I dont eat tofu this was super helpful because I just use chickpeas instead 🙂
