Cooking and nutrition is such a passion of mine. Here I walk you through making an easy, healthy, plant based meal for dinner (with Jillian’s help).

I have had many requests to share some of our meals so I am going to start making more of these COOK WITH ME videos to share some of my go-to vegetarian/vegan plant based family meals. Please let me know if you try it, if you liked it and what you did differently.

Oven 350° F bake covered for about an hour.

6 peppers
1 onion
2 cups spinach
3/4 – 1 loaf whole wheat bread
3 cups uncooked instant rice (or any cooked rice)
1 large can tomato sauce/puree
herbs & spices (paprika, turmeric, tarragon, thyme)
salt & pepper
1 Tbsp flax meal w/ 2 Tbsp water (egg substitute)

Cut tops off peppers, hallow out, wash, place in deep baking dish.

Mix in large bowl: bread, rice, diced onion, diced peppers, chopped spinach, tomato sauce, flax meal mixture, herbs and spices, salt and pepper.

Fill each pepper. Top each one with a bit of tomato sauce. Add 1/4-1/2 cup water to bottom of pan.

Cover tightly with foil and bake at 350° F for about an hour.

Serve topped with a pinch of thyme and ketchup, pair with mashed potatoes.

Thanks for being here!

I make videos of the everyday stuff like cleaning, cooking, mothering, etc. I love to create, so it’s fun for me to make something out of these simple day to day moments that make up so much of my life. Hoping to motivate and inspire others in the process. Please subscribe if you enjoy watching!

  1. Great video! What a wonderful recipe, can’t wait to try! By the way, if you put a dampened paper towel or dampened tea towel under your cutting board it will keep it from sliding around. Blessings to you and your family! ❤️Laurie

Yes! Great alternative recipe of our traditional Greek dish called "gemista", which means "stuffed". Along with peppers we stuff tomatoes, eggplants and zucchini.
