COOK WITH ME | STUFFED PEPPERS | PLANT BASED | HEALTHY EASY FAMILY MEALS
Cooking and nutrition is such a passion of mine. Here I walk you through making an easy, healthy, plant based meal for dinner (with Jillian’s help).
I have had many requests to share some of our meals so I am going to start making more of these COOK WITH ME videos to share some of my go-to vegetarian/vegan plant based family meals. Please let me know if you try it, if you liked it and what you did differently.
Oven 350° F bake covered for about an hour.
2 cups spinach
3/4 – 1 loaf whole wheat bread
3 cups uncooked instant rice (or any cooked rice)
1 large can tomato sauce/puree
herbs & spices (paprika, turmeric, tarragon, thyme)
salt & pepper
1 Tbsp flax meal w/ 2 Tbsp water (egg substitute)
Cut tops off peppers, hallow out, wash, place in deep baking dish.
Mix in large bowl: bread, rice, diced onion, diced peppers, chopped spinach, tomato sauce, flax meal mixture, herbs and spices, salt and pepper.
Fill each pepper. Top each one with a bit of tomato sauce. Add 1/4-1/2 cup water to bottom of pan.
Cover tightly with foil and bake at 350° F for about an hour.
Serve topped with a pinch of thyme and ketchup, pair with mashed potatoes.
