Caramel Bread Pudding
4 bread slices (regular size)
250 -300 ml full fat milk
3 tbsp sugar for caramel preparation
2 tbsp vanilla custard powder
5 tbsp sugar for pudding mixture
1/2 tsp vanilla essence

Remove the edges of bread slices break them into small pieces and grind to a coarse powder

Heat 3 tbsp sugar in pudding mould cook on low flame stirring at regular intervals so that the sugar does not burn

u can do this process in pan to and then pour the caramel into moulds

Slowly sugar will caramelize and turn golden brown remove from heat and rotate tin so that the caramel spreads evenly at bottom

Soon the caramel will harden at the base set the tin aside

In a vessel boil milk adding 5 tbsp sugar keep stirring on medium flame

Remove 1/4 cup milk aside to dissolve 2 tbsp custard powder (mix well so that no lumps are remained)

Once milk starts boiling add the prepared custard and milk mixture
stir continuosly soon the mixture will thicken

Keep mixing on low flame for 3 to 4 minutes then add bread crumbs and vanilla essence again mix well on low flame for 2 to 3 minutes

Once the mixture is combined well
pour into the mould in which we have set caramel earlier

Flatten the mixture even out the surface with a wet spoon if mixture is sticking in the spoon

Now steam the pudding in a vessel
for atleast 20 to 25 minutes

To steam u can use pressure cooker or oven as well …boil water place a bowl or plate or jali at bottom

keep the pudding mould on top of it make sure water does not enter the mould while steaming

If the quantity of pudding mixture is more the cooking time will increase for about 40 to 50 minutes

Unmould the pudding once cooled completely serve chillied cut into pieces and serve
