Dinner Party Ideas, Vegan Roasted Sweet Potatoes with Fresh Basil Pesto

Ingredients

For the Potatoes:
* 2 pounds sweet potatoes, peeled, and chopped into 1 inch cubes (about 6 cups)
* 5 cups chopped green beans & broccoli
* 1 tablespoon avocado oil (or any high heat oil)
* Fine sea salt and freshly ground black pepper

For the Pesto:
* 1 cup packed fresh basil leaves
* 3 to 4 tablespoons hemp hearts
* ¼ cup greek extra-virgin olive oil
* 2 tablespoons fresh lemon juice
* 1/2 teaspoon fine sea salt
* Freshly ground black pepper

For the Salad:
* 3 cups baby arugula
* 2 chopped tomatoes
* Fresh lemon juice
* 1 tablespoon hemp hearts
