    When I was a vegetarian and made lasagna, I made the sauce I'd always made in the past minus the meat. Then I chopped and sauteed mushrooms, peppers, onions, and other veggies in butter and threw them into the sauce. They have TVP crumbles relatively readily available in a lot of store and you could try adding that to your sauce also. It will give that meatiness texture. You might find it more satisfying with more stuff in it.

    The quinoa bake looked delicious. I have a 15 year old who dabbles with being a vegan/vegetarian. Itโ€™s good to support them and help them along the way. Thank you for the ideas!

  5. The lasagna looked delicious!

    The other dish I would have to leave the beans out, and probably use rice instead of quinoa. I would also add in a few more veggies like carrot and broccoli. I add carrots to everything lol ๐Ÿ˜ (they're delicious in an omelette btw…. just saute some finely diced carrot, onion, and peppers in a skillet with olive oil, then add your scrambled egg in and cook…. tastes amazing!)

    Now is Paige just doing vegetarian or is she going to do vegan? If she was vegan I would assume you would not have used egg and cheese in the lasagna lol ๐Ÿ˜.

  8. Im glad you support her choice to go meat free. My oldest has been meat free for 2 years. Excited to see your meal ideas in the coming weeks. My daughters favorite dinner is kale and sweet potatoes ๐Ÿ˜Š

    I try to do meatless Mondays for myself. I make a really good recipe for spicy Thai noodles that's vegetarian but someone could add any kind of protein they want. I also make a really good coconut chickpea curry.

  12. Iโ€™m glad Paige like the lasagna, teenagers can be the hardest to please sometimes! Iโ€™ve always used lentils has a meat substitute in lasagna and chili, but used the same recipes. The texture is about the same as ground beef and you do not taste a difference, so it would pass with the little ones too. Traders Joeโ€™s sells them ready made in 1 pound packs. Just a suggestion

  14. Both looked really good! I make meatless tacos which are just taco shells with salsa, cheese, lettuce and sometime sour cream. I really don't miss the meat.

  15. I like making chili spaghetti for my meatless Mondays. Just make the chili minus the meat and add cheese and sour cream on top. It's really yummy

    Our oven has gone to ๐Ÿ’ฉ as well. Its been broken for maybe almost a month. It just stopped pre-heating. So it's been taking about an hour to cook our food & it has to be on about 400-500 degrees. We just bought a brand new washer & dryer so money's a bit tight. No turkey for us this thanksgiving ๐Ÿ™
