    I love all of these recipes! I made a sweet potato/chickpea curry with spinach, last night. Mine turned out soupy, but I served the veggies with a slotted spoon and let the others add as much broth as they liked. Curry is a real comfort food when the weather turns cold and snowy.

    If you donโ€™t like/have coconut milk or cream or maybe have diabetes, you can substitute it with tahini. Per tin of coconut milk/cream, I put about 1/4 cup (or a 2-4 spoonfuls, I donโ€™t measure it) and then add water until itโ€™s the consistency I like. It also bumps up the calcium and iron count and reduces the fat content significantly. Also makes for a lighter curry.

    Also Mads I love the โ€œcurry daksโ€: your Thailand tourist elephant trousers are the perfect curry-making attire!

    I love curries but I'm allergic to coconut. So if anyone else is allergic to it or just doesn't like coconut, I make curry using a combination of plain yogurt (almond, soy etc) Greek style if I can find it but either works. Then a splash of milk (unsweetened plain almond, soy, rice etc). Works great.

  34. I've watched quite a lot of your recipe videos, and this is coming from a place of love- please buy a proper knife! It's very difficult to cut things like sweet potatoes, turnips and squashes with such a long and thin knife, it looks quite flimsy. Save yourself the inevitable injury and make life a little easier for yourself and buy a good sharp cook's knife โ˜บ๏ธ
